Every time my husband and I go to a Mexican restaurant, we get this dish. It is the perfect combination of cheesy & flavorful. We have a ranking of the best queso fundido in town. After craving this one over and over, I decided that I should learn how to make it. I learned it was actually very simple! This is a great one to make for a weekend watching sports or a casual dinner with friends. The key to this recipe is to shred the cheese yourself. Store shredded cheese will not give you the same melting that we are looking for in queso fundido.
What you will need
1 log of mozzarella cheese
1 wheel of Oaxaca cheese
Tortillas- flour or corn (chips work as well!)
Pico de Gallo- for garnish
How to make
Brown chorizo in a skillet until slightly crispy & set aside. Shred both kinds of cheese (yes, all of it). In a greased casserole dish, place the chorizo in the center of the dish, mix shredded cheese together and place it over the top of the chorizo. Place in a 400-degree oven for about 15 minutes until the cheese is bubbling and beginning to brown on top. Remove from the oven, garnish, and serve immediately with warm tortillas and spoon for scooping. Tortilla chips can also be served with this dish.
